INGREDIENTS:


For the chocolate cake:


  • 200g of full fat cream
  • 75g of Dutch cocoa powder
  • 2 eggs
  • Vegetable oil
  • ½ teaspoon vanilla extract
  • 225g of white sugar
  • 65 g of brown sugar
  • 170 g of all-purpose flour

  • ½ teaspoon salt


For the berry jam:

  • 450g of berries
  • 120 g of white sugar


For the berry buttercream

  • 4-7 spoons of berry jam
  • 55g of all-purpose flour
  • ½ teaspoon of salt
  • 380 g whole milk
  • Vanilla extract
  • 350g of unsalted butter
  • 225g of white sugar


For White chocolate ganache drip

  • 100g of white chocolate 
  • 50 g of heavy cream
  • White food coloring
  • A bit of vodka

RECIPE:


CHOCOLATE CAKE

  • Preheat the oven at 160°C (325°F) or 175°C if you're not using a fan oven. Oil the 3 6" round cake tins. 
  • Take a medium bowl and mix the flour, cocoa powder, baking powder and salt in it together to create a dry batter. Add sugars in it and keep aside. 
  • Put eggs, vegetable oil, sour cream and vanilla extract in a small bowl. Whisk it to get a wet batter.
  • In a small pot, take you water to a boil and add the wet ingredients to the dry batter and whisk it a well little bit and pour the boiling water and stir it until you get the right consistency to avoid lumps. Pour the batter in equal amounts in the 3 tins and bake for 23-25 minutes once done, allow the cakes cool to 10-15 minutes.

BERRY JAM

  • Cook and put the frozen fruits with sugar on medium-high heat till the time it boils. 
  • Turn the flame down and let it cook for about 15 minutes.
  • Filter the jam through a sieve to get rid of berry seeds for smoothness Cover it and put it in the fridge.

BERRY BUTTERCREAM

  • Put the flour, sugar, salt, and milk in a saucepan and heat it on medium-high flame. Don't forget to stir to avoid lumps for 15 minutes. Once it's finished, place a cling film covering the surface to stop "skin" formation and allow it cool to room temperature for the pudding base.
  • Whisk the butter for 5 minutes to make it fluffy. Add spoonful previously made pudding and Stir until there are no lumps. Combine vanilla extract with berry jam and beat until combined.

WHITE CHOCOLATE GANACHE DRIP

  • Take a bowl and put them chopped chocolate and the heavy cream on it. Leave it for 1 minute and stir well to get a smooth batter.

ASSEMBLE

  • Put one cake layer on a cake on a plate. Frost the cake with the help of the piping bag and add berry jam to the top layer.
